After almost three years of writing this blog, I have finally realized something fairly obvious: when I come across a food-related issue I'm excited about—no matter whether it's a restaurant, recipe, or trend—I need to write about it immediately. Putting the story on the back burner just never works; the struggle to get my words down becomes more intense, convoluted, and difficult. Take this post, for example.
